Saffron pistachio milk cakeIngredients1 sponge cake, 8-inch500 ml full-fat milk200 ml condensed milk100 ml cream½ tsp saffron strands½ tsp cardamom powder50 g chopped pistachios2 tbsp sugarPistachio slivers and saffron, for garnishSaffron pistachio milk cake recipe. (BarNaan, Connecticut)Method1. Bake a light vanilla sponge and allow it to cool completely.2. In a saucepan, combine milk, condensed milk, cream, sugar and saffron. Simmer gently for 8–10 minutes until slightly reduced. Add cardamom powder and cool the mixture.3. Place the sponge in a serving dish and prick it gently with a fork. Pour the saffron milk mixture evenly over the cake, allowing it to absorb completely.4. Refrigerate for at least 4 hours.5. Garnish with chopped pistachios and saffron before serving.2.
