Hong Kong’s pizza scene is firing up, with four local restaurants claiming spots on the 50 Top Pizza Asia-Pacific 2026 list and two internationally recognised names entering the market.Joining the likes of Fiata – ranked joint third on the above list – in the city are Vincenzo Capuano, whose Naples pizzeria is No 13 on the 50 Top World Artisan Pizza Chains 2025 list, and Tokyo’s The Pizza Bar on 38th, which placed No 2 on the 50 Top Pizza World 2025 list.Capuano launched his first Hong Kong outpost in Wan Chai in May, following the opening of his first Asia location in Singapore last year. His eponymous brand now operates more than 40 restaurants worldwide across Europe and the Middle East.Capuano, a third-generation Neapolitan pizzaiolo – an honorific reserved for a professional pizza chef or maker in Italy – has around 4 million followers across Instagram, TikTok, Facebook and YouTube. He has numerous accolades, including the title of World Champion of Contemporary Pizza 2022 for his signature Provola e Pepe pizza.Capuano’s pizzas use a cloud-like nuvola base, which uses a high-hydration dough – 80 per cent water relative to flour weight – that has been fermented for 24 to 30 hours to achieve an exceptionally light, airy and digestible crust.“The dough is the result of experimentation from my grandfather’s time to now,” he explains. “We’ve had experience adjusting the water content with the time of the fermentation and the heat of the oven to get it perfect. This needs to be adjusted for different humidity and temperature levels.”
