One of the most influential sushi chefs in the world is set to open his first restaurant in London in what could become the most sought-after and expensive dining experience in town.

Masa Takayama will blend Japanese precision with western luxury at Tobi Masa, which is due to open at the Chancery Rosewood hotel in Mayfair in September.

Widely regarded as the chef who redefined sushi in America, Takayama is credited with transforming the New York dining landscape when he opened his self-titled restaurant Masa in 2004.

Masa, which holds three Michelin stars, is known as the most expensive restaurant in the United States. According to US media, the price of a meal at Masa costs about $1,000 a head before drinks and service.

Takayama will bring the groundbreaking omakase philosophy to the UK — a form of Japanese dining in which guests place themselves in the hands of a skilled chef and expect a meal that is elegant, seasonal and artistic, and that consists of the finest ingredients available.
