A lighter take on the classic ice cream bites, made with Greek yogurt, berries and whipped cream, then finished with a rich white chocolate ganacheTom Franz| Related TopicsEquipment:3–4 ice cube traysSilicone trays are recommended, as they make the frozen yogurt bites easier to remove.Frozen yogurt bites(Photo: Afik Gabay)For the frozen yogurt bites:1 cup frozen berries3 tablespoons sugar or honey, adjusted to taste250 grams (about 1 cup) Greek yogurt 250 ml. (about 1 cup) heavy whipping creamFor the white chocolate ganache:100 ml. (about ⅓ cup + 1 tblsp) heavy cream200 grams (about 7 oz) white chocolatePinch of saltPlace the frozen berries and sugar or honey in a blender and process until smooth.Whip the heavy cream until stiff peaks form. Fold in the Greek yogurt and berry puree until evenly combined. Taste and add more sweetener if needed.Using a teaspoon or piping bag, fill the cavities of the ice cube trays with the mixture.Freeze for at least 5 hours, preferably overnight.For the white chocolate ganache:Break the white chocolate into pieces and place it in a bowl.Heat the cream in a small saucepan. Just before it reaches a boil, remove it from the heat.Pour the hot cream over the chocolate and stir until smooth. Add a pinch of salt.Once the ganache has cooled to room temperature, remove the trays from the freezer and release the frozen yogurt bites onto a plate or wire rack.Using a teaspoon, drizzle the ganache back and forth over the bites.Return them to the freezer until set.Store in an airtight container in the freezer, separating the layers with parchment paper.Comments
