Merguez, feta and red pepper meatball-stuffed pittas
275g merguez sausages2 roasted red peppers from a jar, one finely chopped, one finely sliced100g feta, crumbled20g flat-leaf parsley, finely chopped20g mint, finely chopped2 tbsp olive oil8 white pitta breads, lightly toasted8 large handfuls of salad of choice, such as rocket and baby leaf230g tub tzatziki3 tbsp pickled red onions2 whole lemons, cut into wedges
Squeeze the sausage meat out of the casings and mix with the chopped pepper, feta, parsley and mint.
