One of the best Japanese meals I've ever had wasn't in Japan.

Instead, let me take you to a tiny island in the northern Yasawas, a string of remote volcanic islands northwest of the Fijian mainland. They’re famous for their white-sand beaches, crystal-clear water, and some of the best snorkelling in the South Pacific.

Here, you’ll find Blue Lagoon Resort, known for its stunning beach and a coral reef you can snorkel straight off the sand. But it's time to add another thing to the list: its Japanese restaurant.

It’s called Donu and started life at Blue Lagoon's fancier sister resort, Paradise Cove, before opening at Blue Lagoon last year. And it's exceptional.

The head chef is an ever-smiling Fijian called Sake. The resort sponsored him to study culinary arts in Tokyo, then brought him home to run Donu’s kitchen and upskill local chefs.
