India cannot boast of Michelin star restaurants yet. A number of Indian-origin chefs, particularly in the UK and West Asia, however, have helmed restaurants that have got the honour. Fresh off the launch of their Chinese restaurant, Yan Yan, The Ritz-Carlton, Bangalore unveiled another new restaurant last week. Zarqash is in partnership with Chef Rohit Ghai, a London-based chef with many restaurants under his belt, one of which, Jamavar, won the prestigious Michelin star when he worked there. Today he owns Vatavaran, Kutir and Manthan in London, and others in Dubai, Morocco and Muscat. Zarqash is his first venture in his home country, India. The restaurant is located on the fourth floor of the hotel, where their Indian restaurant Riwaz used to be. The heart of the Zarqash is the open kitchen where busy staff is darting in and out as Rohit preps the dishes for our dinner. The space is plush and luxurious, just like the food.
