ow late did you guys stay out last night?” jokes Dave’s Hot Chicken CEO Bill Phelps. The 69-year-old, who joined the Los Angeles-based spicy chicken chain in 2019 after leading Blaze Pizza and Wetzel’s Pretzels, is sitting next to his second in-command, Dave’s president and COO Jim Bitticks, another Blaze alumnus, on one side of a large conference room table in Forbes’ Jersey City office.
