Instead of discarding it, she donated it to a local soup kitchen where it fed 275 people in a single meal. That moment led her to found Katie's Krops, a nonprofit that now runs more than 100 youth-led vegetable gardens across 33 states and has donated over half a million pounds of produce to people facing hunger.
