Add the peppercorns and dry red chillies, then sauté them briefly. Next, add hing, mustard seeds, cumin, chana dal and urad dal. Allow the mixture to crackle and cook until the dals turn lightly golden.Step 3: Add Vegetables And SpicesAdd chopped ginger, green chillies and curry leaves to the batter. Now add the grated carrot and chopped onion, and coriander. Mix all of these. Add baking powder just before you are ready to cook the appes. Gently mix it into the batter.Step 4: Cook The Masala AppesHeat an appe pan and lightly grease or spray oil into each cavity. Pour some batter into the cavities and place a small cheese cube in the centre if you want a cheesy filling.Cover the cheese with a little more batter and cook the appes over medium heat. Turn them occasionally so that they cook evenly and become golden and crisp on all sides.Serve Hot With ChutneyOnce the appes are cooked, serve them hot with green chutney or ketchup.
