An immersion blender comes in handy when you don’t want to unearth your upright blender just to whip up a quick sauce or soup. Despite being a compact kitchen appliance, it doesn’t sacrifice the efficacy of a good blender; you can use it to make everything from one-minute mayonnaise to silky-smooth tomato soup straight from the can in just a few pulses.

Some immersion blenders can be even more versatile than a blender or a hand mixer, including helpful attachments such as a whisk or a chopper. In one go, you can alternate recipes in just a few minutes, all with far fewer bowls (and shirts) to clean.

As much as I appreciate my beloved Vitamix 5200, an immersion blender can be even easier to use and rinse off, especially when I’m in a hurry. Plus, it doesn’t take up as much counter space.
