In a pan, ghee is heated, followed by garlic, green and red chillies, methi dana, hing, jeera, mustard seeds and curry leaves. These ingredients are sautéed for 2–3 minutes until aromatic.Next, chopped methi is added to the pan and sautéed for another two minutes. The prepared besan-yogurt mixture is then poured in and brought to a boil over a medium flame. Once it starts boiling, the kadhi is cooked for around five minutes. Boiled kala chana is added next, and the kadhi is allowed to simmer for another 10–15 minutes so the flavours combine well. Finally, a little jaggery is added for balance. The methi chana kadhi is served hot with rice.
