Crispy smashed potatoes with creamy garlic dipIngredients500g baby potatoes2 tablespoons olive oil1 teaspoon garlic powder1 teaspoon dried mixed herbsSalt and freshly ground black pepper, to tasteFresh parsley, chopped, for servingFor the dip:½ cup plain Greek yoghurt or mayonnaise1 garlic clove, finely grated1 tablespoon lemon juiceSalt and black pepper, to tasteHomemade samoosasIngredients500g plain flour½ tsp salt2 tbsp oil300 to 350ml water, adjusting as neededPlain flour, for layeringOil, for layeringMethodMix the flour, salt and oil in a large bowl until the mixture resembles breadcrumbs.Gradually add the water and knead until you have a smooth, firm dough. Cover and leave to rest for 30 minutes.Divide the dough into 16 equal portions, about 50g each, and roll each one into a circle.Brush each circle lightly with oil, making sure to reach the edges, then dust with flour. Stack four circles together, placing the fourth circle oil-side down.If you're making homemade sheets for the first time, start by stacking just two circles until you become comfortable with the technique.Gently stretch the stacked dough with your fingers before rolling it into a rectangle measuring approximately 23cm by 25cm. Roll lightly so the layers stay separate.Cook on a large tawa or frying pan over low heat. Once bubbles appear, flip and cook briefly until there are no raw patches. Avoid overcooking or allowing brown spots to form.Separate the layers while still warm and keep the finished sheets wrapped in a damp kitchen towel.Trim the edges and cut each sheet into three strips. This recipe makes about 48 samoosa sheets.Wrap well in cling wrap before placing into a freezer bag. Freeze until needed.Asian Chicken ConesIngredients2 Chicken breasts cut into slices1 cup oil (for deep frying)1 tablespoon of paprikaSalt and pepper2 tablespoons oil for rubbing the chickenFlour for dusting the chickenFor SauceCup of Soya Sauce1 tablespoon of honey¼ cup of tomato sauce1 tablespoon of sesame oil½ teaspoon of chilli flakes2 Tortillas cut into 4 for bite sizeFor the cone½ sliced red onionFresh corianderCherry tomato sliced in halfA mixture of mayonnaise and sweet chilli sauceSesame seed for garnishMethodMarinate the chicken with the mixture of salt, pepper, paprika and oil and rub the chicken. Dust it on flour and deep fry it. Set it aside on a paper towel to drain the oil.On the side prepare the sauce by mixing soya sauce, sesame oil, chilli flakes, tomato sauce and honey and coat the chicken with the sauce.Mix mayonnaise and sweet chilli sauce and now it is time to assemble.Layer the sweet chilli mayonnaise onto the tortilla then place the fresh coriander, the chicken, onion and tomato and then roll it to form a cone.Dust the chicken with sesame seeds.
