Most home cooks rotate through the same three or four root vegetables all fall and winter, potatoes, carrots, onions and maybe a sweet potato, while a considerably wider range sits in the same produce section offering more distinct flavor and texture than the usual rotation provides. Part of the reason these vegetables stay underused is that they're less familiar in the kitchen than they are on the shelf, and without a specific idea of how to actually prepare them, they get passed over in favor of something already known to work.
