Food Safety officials inspecting the central kitchen of Theobroma Foods, a reputed bakery chain at Amberpet in Hyderabad, found multiple serious violations of food safety, hygiene, storage, labelling and licensing requirements.During the inspection, officials found frozen meat products being stored at 6°C instead of the prescribed -18°C. Expired chicken wings were found at the facility and discarded on the spot. Raw meat was also being handled without gloves, while inadequate cleaning and pest infestation were observed in the premises.Officials found cakes stored without adequate spacing, with water dripping from an air-conditioner onto the cakes. Dirty baking trays, wet and unclean floors, food spillage and uncovered dustbins were also observed. Eggs contaminated with faecal matter were found in the storage area. Several food articles were stored directly on the floor, while inadequate spacing between racks and walls was also noted.The inspection also found deficiencies in the training of food handlers. The personnel had only basic training and certification, whereas specialised or advanced training was required for manufacturing activities, according to the officials.Products found to be in violation of FSSAI labelling requirements were seized. Officials also found prepared dough and other products carrying shelf-life claims that were not substantiated. Expired cream and chocolate products were seized for improper adherence to the First-In, First-Out (FIFO) system.As part of the enforcement action, about 24 kg of potatoes and 60 kg of chocolate callets affected by spoilage or mould contamination were discarded. Other unsafe, expired and mould-affected food items were also disposed of on the spot.The inspection further revealed licensing-related violations. The Food Business Operator (FBO) was found to have operated without a valid FSSAI licence during the period from April 20 to May 28, 2026. Officials also found that the licence categories and jurisdiction were not compliant with the requirements. The transport agency associated with the operation was also found to be functioning under an incorrect FSSAI category.Notices have been issued and further regulatory action has been initiated over the violations.
