It is always a pleasure to be invited to the final exam dinners of Jackie Cameron’s students. They start at her School of Food and Wine as clumsy and almost clueless. They cut themselves with knives, they drop cutlery, they can’t make a basic roux and even Jackie's simple scone recipe foxes some of them.
And then 18 months later they turn out magnificent meals, which they’ve planned, costed and produced themselves. They only have the help (or is it hindrance?) of the new batch of first years. The food and flavours are essentially their own story. The increased confidence they show over the period is another heart warmer.
