Add the chopped onion and garlic, and sauté for two to three minutes until the onion becomes soft and translucent.Add the mushrooms and zucchini to the pan. Stir well and cook for a few minutes until the vegetables begin to soften and release their moisture.Pour in the tomato puree and add the salt, dried mixed herbs and penne pasta. Mix everything thoroughly so that the pasta is evenly coated with the sauce and seasonings.Add the sugar and 2 cups of hot water, stirring well to combine. Cover the pan with a lid and cook on medium heat for 10 to 12 minutes, or until the pasta is tender and has absorbed most of the liquid.Once the pasta is cooked, add the green capsicum, cherry tomatoes and butter. Toss gently until the vegetables are slightly softened and the butter has melted into the sauce.Transfer the pasta to a serving plate or bowl.
