There are simple ways to turn a boring toastie into a gourmet lunch.

My kids are obsessed with cheese toasties. Honestly, I can’t blame them. There’s something comforting about hot, melted cheese between crispy slices of bread that never gets old.

In our house, they are perfectly happy with the most basic version possible. White bread, cheddar cheese and straight on the pan. No extras. No fuss.

But sometimes, especially when you are making lunch for yourself, you want a version that feels a little more special.

The kind of toastie you would order at a trendy café with chips on the side and an overpriced latte.
